For 2 servings
100 gr corn flour
80 gr corn starch
90 ml water
3 tbsp olive oil
600 gr sweet potato
1/2 tsp cumin
1/2 tsp paprika
1 tsp sriracha
For the tortilla:
In a bowl, mix the corn flour, corn starch and salt. Add the water and the olive oil and knead the dough for a few minutes.
Roll the dough into 6 balls.
Place each ball between 2 baking sheets and flatten them with the back of a pan.
Cook each tortilla for a few minutes on each side, flipping it when it becomes golden.
For the filling:
Mash the avocado with some salt and lime juice.
Shred the red cabbage and pickle with some salt, lime juice and olive oil.
Shred the sweet potato and cook in a pan with some oil, add the cumin and the paprika and cook for approximately 5-10 minutes. Add the sriracha at the end.
To assemble the tortilla:
Spread the mashed avocado, top with some sweet potato, add more sriracha for extra punch, add the picked cabbage and a few coriander leaves.
